So for the last 30 days I’ve been eating vegan. It has been tough, but incredibly awesome at the same time. I had to do a lot of research to ensure that my body was getting the nutrients that I needed. While eating vegan, I have10x more energy & I feel absolutely incredible. I think the increase in energy can be attributed to a couple of super foods that I included in my diet. Keep reading to learn more about which foods you should try to add into your diet as well.
Superfood #1: Sweet potatoes
There are so many health benefits to sweet potatoes. They are loaded in vitamin B6, vitamin C, vitamin D, potassium & more. They also taste so delicious. One of my favorite ways to make them is cutting them up into thin slices, putting some seasoning on them & sticking them into the oven. They are my healthy version of “fries”. (without the guilt J)
Superfood #2: Quinoa
Quinoa is a great source of protein & a bunch of nutrients including magnesium, iron, & potassium. It is gluten free & relatively inexpensive. One of my favorite ways to eat quinoa is in a quinoa bowl. You can make a Mexican quinoa bowl by throwing in some black beans, corn, chickpeas, cilantro, salsa & some avocado. It’s making me hungry just thinking about it!
Superfood #3: Chia Seeds
Chia seeds are a nutrient powerhouse. They have a ton of fiber, antioxidants & iron. They also have omega 3’s which are amazing & fight inflammation. One of my favorite ways to eat them is making chia seed pudding. Grab your favorite flavor of almond milk (or regular milk if you eat dairy), honey, chia seeds & vanilla. Throw them into a bowl & let it chill for a couple of hours. Boom! You have an extremely healthy sweet snack.
Superfood #4: Chickpeas
Chickpeas are high in fiber, full of magnesium, iron, calcium, zinc, vitamin K & more. There are also a ton of different ways to eat chick peas. If you are looking for a delicious way to eat chick peas, try adding in some chopped up onion, balsamic vinegar & a little bit of olive oil. Mix it all up & this healthy snack is ready to eat.
